Chunks of red potatoes are cooked to perfection and loaded with ranch seasoning and Parmesan cheese. This is one of the very best Instant Pot recipes you will ever make! Everyone will love these!

It’s hard for me to even describe how awesome these are. The flavors of Parmesan cheese and ranch seasoning go perfectly together with potatoes. I’d say they’re even addicting! And making potatoes in your Instant Pot couldn’t be easier.

Ingredients

We’ll use red potatoes for this recipe. They hold up the best, have a great flavor, and perfectly complement the flavors of the Parmesan and ranch.

Do you keep a container of dry ranch seasoning around? If you don’t, you should! It’s great on so many different dishes. We’ll use 3 tablespoons (1oz) of it for this recipe. If you can only find the packets, they usually come in convenient 1oz size.

The potatoes will cook in a cup of chicken broth, which will impart it’s flavor, making these potatoes extra delicious.

When the potatoes are done cooking, we’ll add a cup of Parmesan cheese. I’m a big fan of freshly grated Parmesan cheese, but if you have only the packaged grated Parmesan cheese, you can use that as well.

Preparation

The only prep is to cut the potatoes into chunks about 1 inch in size. There’s no need to be perfect; for most red potatoes, that generally means cutting them into quarters. Basically, you want to make them bite-sized.

Cooking

Add the potatoes to the Instant Pot and pour in the chicken broth. Stir in the ranch seasoning. Secure the lid and pressure cook on high for 7 minutes.

It will take about 10 minutes for the pressure to build up, then the actual cooking cycle will begin to countdown.

When the pressure cooking cycle is complete, quick release the pressure and carefully remove the lid after the pin drops.

Stir in the Parmesan cheese slowly, about ¼ cup at a time and gently stir until melted. Repeat until all the cheese is used.

Slowly, the liquid and cheese will thicken and by the time you have all the cheese mixed in, it will be a creamy, heavenly delight. After all the cheese is mixed in be sure to press cancel to stop the keep warm mode. Then you’re ready to serve your delicious Instant Pot Parmesan Ranch Potatoes!

Ingredients

  • 2 lbs red potatoes
  • 3 tbs ranch seasoning mix (1oz)
  • 1 cup Parmesan cheese, shredded
  • 1 cup chicken broth
  • Fresh parsley or parsley flakes to garnish

Instructions

  1. Scrub potatoes and cut into chunks of about 1 inch each.
  2. Place potatoes to Instant Pot and add chicken broth. Mix in ranch seasoning.
  3. Secure lid and make sure vent is in sealing position. Use manual/pressure cook setting (high pressure) for 7 minutes. When cycle is complete, do quick release of the pressure and remove lid.
  4. Add Parmesan cheese, ¼ cup at a time and gently stir until melted. Repeat until all cheese is used.

    With a caveat. I used Simply Organic ranch since it’s cleaner but my potatoes came out fine, sauce was way too salty, the Imagine chicken stock made it all brown and ugly. I’m going to try again making an ersatz ranch sauce to add over the top.

    I’ve made these several times but usually with yellow potatoes. Last night we had a lot leftover so I fried them tonight for dinner and it did NOT disappoint! I will always be making extra. Thanks for the quick recipe.
