Oatmeal Peanut Butter Chocolate Chip Cookies recipe with creamy peanut butter, semi sweet chocolate chips, and quick oats. These are the best cookies with a cold glass of milk!
I’ve never been a fan of those plain peanut butter cookies everyone always raves about. I love PB&J sandwiches and I’m totally addicted to Reese’s cups, but I’ve never been huge into peanut butter cookies. Paul, on the other hand, is obsessed with them. So I went on the hunt for a peanut butter cookie that had something mixed in for me. These were so good! I liked them so much, I actually made a second batch right away and stuck them in the freezer for my cookie trays. Yum!

Ingredients
- 1/2 cup butter softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 3/4 cup peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup quick oats
- 1 cup semi sweet chocolate chips
Instructions
In a mixer, cream together butter, sugars, and peanut butter.
Add in egg and vanilla on medium speed.
In a separate bowl, sift together flour, baking soda, and salt.
Gradually add dry ingredients to wet ingredients until fully mixed.
Stir in oats and chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
Flatten with a glass dipped in flour, or a fork in a criss-cross pattern if desired.
Bake at 375 for 6-9 minutes, until edges begin to brown.
Cool on wire racks.

I made these cookies last night; while they're tasty, they are quite dry. The dough did not hold together well both before and after cooking. If I were to make them again (and I might because they really are yummy), I would probably add another 4T of butter.

Oh, I'm sorry they were too dry for you Melanie! They are a drier cookie, but I haven't had problems with the dough holding together. If you do add the butter, be sure to let me know how it turned out!

I’ve baked these cookies almost for 10 years and they are still my favourite (and always a success when I gift some). I turned them into metric (I’m from Europe), maybe because of the conversion they were never dry to me. Thanks for the recipe!
